This unique batch was crafted in San Miguel Atlapulco, located in the semi-arid highlands of the Mixteca Poblana in Puebla, where temperature variations between hot sunny days and cool nights provide challenging conditions for agave cultivation.

Created by Maestro Nazario Salas—multiple gold medal recipient at Mexico’s premier spirits competitions—this mezcal is a refined expression of Puebla’s long-overlooked distilling tradition. It reflects the resilience and devotion of mezcaleros who, despite all obstacles, have preserved their ancestral craft with quiet pride.

Each sip offers a rare opportunity to taste the distinctive terroir of Puebla, recently recognized by many as both authentic and exceptional.


Agave & Production

The batch was produced with Mapisaga agaves, known for their robust size and complex sugar development, reaching heights of 3–4 meters at maturity. These agaves were cultivated for over 12 years in Tectzoyocan. Nineteen plants were carefully selected to ensure full maturity, resulting in a harvest on March 21, 2024, totaling 2,870 kg of mature agave piñas.

The agave heads underwent a traditional five-day roast in a conical earthen oven using eucalyptus wood—commonly found in the region. The cooked piñas were processed with a semi-industrial shredder, maintaining efficiency while preserving traditional flavor profiles.

Fermentation took place in open-air 1,000-liter oak vats using pure well water and indigenous yeasts over seven days—a controlled natural process that has become Nazario’s signature method.

Distillation occurred on April 17, 2024, in a 400-liter copper alembic still, a key step that has consistently earned Nazario top recognition among fellow maestros and mezcal enthusiasts.

This batch yielded only 242 liters. Most was sold among friends and relatives for local festivities. Puntiagudo was able to reserve just 100 liters, resulting in a limited release of only 138 bottles (750ml).

Tasting Notes

Aroma: Bright and wild. Notes of fermenting tepache, tangy yogurt, and damp leather, edged by a whisper of acetone—not a flaw, but a feature, marking its living complexity.

Palate: Lactic richness on the front, easing into mineral sharpness. There’s spice on the tongue and silky smoothness on the finish. This mezcal doesn’t shout—it lingers, it speaks, it stays.

Recommendation: Best served neat, in good company, and with respect. Pairs beautifully with tuna, salmon, or a light cut of grilled meat—anything that honors its bright, tangy profile.
