This Pechuga Artesanal begins with an exceptional Espadín mezcal produced in San Agustín Amatengo, Oaxaca, a community in the Ejutla district renowned for its distinctive refrescadera distillation method. This traditional copper still creates a remarkably clean yet richly textured mezcal, allowing the natural character of the agave and the surrounding landscape to shine through.

The agaves used for this pechuga are shaped by the unique geography and climate of southern Oaxaca’s Central Valleys. Warm days, cool nights, mineral-rich soils, and seasonal mountain rains encourage slow maturation, concentrating sugars and aromatic compounds within the Espadín. The result is a mezcal that naturally expresses notes of cooked agave, fresh herbs, delicate floral aromas, gentle minerality, and a refined smokiness—an ideal foundation for a sophisticated pechuga. Combined with natural fermentation using spring water and traditional production methods, these environmental conditions give the spirit remarkable balance, elegance, and depth.

Crafted by Maestro Mezcalero Luis Juárez

This expression was produced by Luis Enrique Juárez, from a family with five generations of distilling tradition. Having learned the craft alongside his father, Sergio Juárez, from an early age, Luis has become recognized for preserving the traditional techniques of San Agustín Amatengo while embracing thoughtful innovation. Since leading his own production in 2015 with GOZONA, he has earned international recognition for his mastery of the refrescadera still and for producing small-batch mezcals that faithfully express the identity of his community and its agaves.

A Distinctive Interpretation of Pechuga

Unlike many traditional Oaxacan pechugas, which commonly rely on seasonal fruits such as apples, oranges, bananas, or local herbs and spices, this release explores a different sensory direction. During the second distillation, a 2.8 kg turkey breast is suspended inside the still while 13 kg of carefully selected red fruits, together with cinnamon and lemon, are incorporated into the process.

The red fruits contribute vibrant layers of raspberry and berry preserves that beautifully complement the naturally sweet, floral profile of the Espadín. Rather than overpowering the spirit, they integrate seamlessly with the cooked agave, creating remarkable complexity while preserving the authentic character of the mezcal itself.
