This exceptional batch of 100% Capón Espadín mezcal offers an unparalleled depth of flavor that defines every spirit crafted by Maestro Onofre Ortiz. It is a precise, perfectly executed expression of artisanal mezcal, produced in Bramaderos, a community nestled within the Miahuatlán district of southern Oaxaca.
Renowned for its high-altitude valleys, rocky terrain, and arid climate, Miahuatlán provides ideal conditions for Agave angustifolia. In this environment, capón plants develop significantly higher sugar concentrations due to their extended maturation—resulting in a spirit with exceptional density and a pronounced mineral character that younger agaves simply cannot achieve.
The agaves used for this batch were cultivated for over eight years by Onofre’s family. After reaching full maturity in 2023, the quiote was cut and the plants were left in the field for an additional year to further concentrate sugars and intensify flavor. They were finally harvested on March 5, 2024.
A total of 18,050 kg of Espadín were slow-roasted over six days in a conical underground oven, using Guamúchil and Mesquite woods—both native to the region and prized for their clean, subtly sweet smoke. The roasted agaves were then mechanically shredded and naturally fermented for eight days in open-air 1,200-liter sabino wood vats, using well water and native microflora.
Distillation took place on April 10, 2024, in a 350-liter copper alembic still, yielding 1,700 liters of mezcal at 45.6% ABV. The result is a clean, mineral-forward spirit with a silky texture.
Aromatically, it opens with subtle salinity and tropical fruit notes. On the palate, it reveals cooked maguey, mild sweetness, a distinct mineral thread, and a touch of spice—finishing with the gentle heat and roundness that define quality Espadín from this region.
This mezcal is highly versatile: balanced enough for cocktails, yet structured and expressive enough to be enjoyed neat. Best appreciated with a glass of water to unlock its layered flavors, it stands as a direct reflection of the Miahuatlán landscape—arid, elevated, and complex—and of Onofre’s methodical, distinctive approach to production.
