From the heart of Santa Catarina Minas, Oaxaca, we have a distinct offering from Maestro Rolando Angeles, which isn’t just an agave spirit; it’s a Cuishe Ancestral (Rhodacantha Silvestre), a wild agave varietal renowned for its unique characteristics. The piñas, averaging 8-10 years of age, contributed a weighty 3901 kgs to this specific Batch RA-CUI-01, culminating in a potent 48.9% ABV that commands respect.
The Ancestral Journey
The harvesting of this Cuishe began on February 5, 2022, with the piñas then undergoing a five-day roast in a traditional conical earthen oven. The terroir speaks through the smoke, infused by Guamuchil and Mesquite wood—a masterful dance of fire and earth. Forget mechanical shredders; here, the agave surrendered its sugars through the rhythmic impact of machetes and wooden mallets, a testament to the hands-on ancestral method.
Fermentation, a mystical transformation, unfolded naturally for nine days in 1000-liter oak vats, hydrated by pure well water. The spirit was then twice coaxed into being on March 8, 2022, not in modern stainless steel, but in the venerable embrace of a 100-liter clay pot still—a vessel that imparts a distinct minerality and purity. From this meticulous process, a precious 119 liters were yielded. A final, crucial step: this mezcal wasn’t rushed. It underwent over three years of patient rest in glass, allowing its complex character to meld and deepen before 117 liters were bottled on March 15, 2025, filling 156 bottles of 0.75L each, making it a truly limited and anticipated release.
