Crafted by maestro Rolando Ángeles in Santa Catarina Minas, Oaxaca, this ancestral mezcal is made from wild Lyobaa agave—one of the rarest and most delicious wild agaves found in Oaxaca for mezcal production. The agaves were harvested at peak maturity (10–12 years old), totaling 1,100 kg of agave heads.

Harvested on August 1st, 2023, the agaves were slow-roasted for five days in a traditional underground earthen oven using Guamúchil and Mesquite wood. After roasting, the piñas were hand-crushed with machetes and wooden mallets.

Fermentation was 100% natural, carried out in open-air 1,000-liter oak vats using well water. It lasted eight days, until Rolando deemed it ready for distillation.

Double distillation was carried out over three days, finishing on August 30th, 2023, using a 100-liter clay pot still—true to ancestral methods. This batch yielded only 78 liters, which equates to just 1 liter for every 14 kg of agave.

The spirit was then rested in glass for over two years before being bottled on March 15th, 2025, resulting in just 40 bottles of 750 ml each, bottled at 46% ABV. All of them now belong to our friends at KNL in Los Angeles.

Aroma: Opens with fresh citrus and green herbal notes. Layers of sweet eucalyptus and tender cactus are followed by earthy undertones—green wood and ash add depth and complexity.

Palate: Medium-bodied with a damp wood profile. The flavor evolves with tropical notes of banana, mango, and loquat, finishing with subtle hints of cooked seeds. A delicate balance of green apple and plum leads to a soft, lingering astringency.

Serving Recommendation: Best enjoyed neat, paired with gazpacho or a chilled vegetable soup. Also shines alongside fresh seasonal fruits dressed with lime and salt, or a slice of crusty sourdough for a savory twist.
