Rooted among the winding hills of Santa María Velató, where the semidesertic climate shapes both land and spirit, Mario Acevedo—following his profound love for the plants and deep respect for the land—has transformed the raw beauty of these Karwinskii agaves from the local region of Coatecas Altas into an extraordinary expression of artisanal mezcal: Barril 750ml, a rare and resolute micro-batch whose entire production has been secured by K&L Wines.
Each plant, semi-cultivated for over a decade, reflects the unhurried rhythm of the land. Harvested on August 6th, 2024, the 48 agave heads—totaling 815 kg—were cooked for seven days in a conical earthen oven fired with Guamúchil and Mesquite wood, infusing the agave with deep smokiness and complexity.
After shredding with a semi-industrial mill, the mash fermented naturally for nine days in open oak vats, relying solely on ambient yeasts and pristine well water. Double distillation took place in a 350-liter copper alembic on July 15th, 2024, producing JUST 24 liters that match Mario’s strict palate—only 30 bottles at 50% ABV, just the way Mario likes it. Bottled on March 15th, 2025, this lote, numbered MA-BAR-01, is not only limited—it is gone.
All 30 bottles of this small batch were acquired by K&L Wines, making this Barril 750ml batch an ultra-exclusive release, available only through their carefully curated mezcal collection. Its scarcity is matched only by its depth of character and sense of place.
Aromatics & Palate
Aroma: The spirit opens with earthy and mineral tones, cooked maguey, and damp wood, giving way to crisp apple, mango, peach, and a whisper of tamarind.
Palate: Notes of fruit caramel and apple evolve into gentle astringency, framed by herbal nuances and a clean, mineral finish. A lively, green-fruit aftertaste and a tingling kiss of alcohol complete the profile.
Pairing: Enjoy neat or with a few drops of water. Barril shines as a digestif, especially paired with almonds or walnuts, allowing its orchard-like brightness to bloom.
