ESPADÍN ARTISANAL 1L

PUNTIAGUDO OO-ESP-07 / 08, Espadín – 1 L

Our 1 Liter Espadín presentation is versatile: balanced enough for cocktails, yet structured enough to be enjoyed neat. This espadín is produced by Maestro Onofre Ortiz, with whom we have worked since 2020, in Bramaderos, Miahuatlán, Oaxaca.

Onofre is the son of Alberto Ortiz, who has produced mezcal for over 40 years and taught him everything he knows about the craft. That teaching shaped Onofre’s style: he works with 100% mature espadín capón for the sweetness and complexity it gives the finished mezcal. He favors strengths between 46 and 47% ABV because, in his view, this preserves the freshness and appealing flavors that suit most mezcal drinkers. From his father, he also learned that the final blend needs no added water, even at strengths below 48% ABV.

This latest release of Espadín 100% Capón carries forward the profile that Onofre Ortiz brings to every batch he crafts in Bramaderos, Miahatlán.

Situated in the Sierra Sur of Oaxaca, Miahuatlán’s high-altitude valleys, dry climate, and rocky terrain provide ideal conditions for Agave angustifolia to flourish. Following Onofre’s strict method, the agave plants mature for 7 to 8 years, after which the quiote is removed. The plants are then left to rest in the field between 6-12 months, which maximizes sugar concentration and develops the remarkable sweetness, density and mineral character that define his spirits.

For batches OO-ESP-07 and OO-ESP-08, Onofre processed 24,450 kg and 23,950 kg of agave, respectively. The agave heads were slow-roasted in a traditional pre-Hispanic conical stone oven using local mesquite and jacaranda woods, which impart a clean, delicate smokiness. The cooked agave was crushed with a machete and mechanical mill, then naturally fermented with wild yeast and local well water in 1,200-liter sabino wood vats. The fermented mash was twice distilled, in April 2026 and August 2026 respectively, in a 350-liter copper pot still, producing 2,500 liters of mezcal in each batch at 46% ABV with no added water.
